These Spring Roll Bowls are an all-time favorite. They are vegan, fresh, healthy, and full of veggies! All the yummy, freshness of spring rolls minus the hassle of rolling them! And as for the peanut sauce, it doesn’t get any better than this!
I love making these for dinner parties and letting the kids and adults assemble themselves so everyone can choose the toppings they like!

Spring Roll Bowls
Ingredients
FOR THE BOWLS
- Rice noodles
- Carrots
- Red pepper
- Cucumber
- Radishes
- Avocado
- Basil
- Mint
- Cilantro
- Other possible toppings include chicken, shrimp, salmon, cabbage, snap peas…
FOR THE PEANUT SAUCE
- 1/2 cup Peanut butter
- 1 tbsp Coconut aminos
- 1/2 cup Full fat coconut milk
- 1/2 tsp Toasted sesame seed oil
- 1/2 tsp Fresh ginger
- 1 clove Garlic
- 1/2 tsp Fish sauce omit to make dish vegan
Instructions
FOR THE SAUCE:
- Combine all ingredients with a whisk in a small bowl. Pour into a small saucepan and heat over medium heat until sauce begins to bubble and thicken. If sauce is too thick, add more coconut milk.
PREP THE VEGGIES:
- Mince the herbs and peel or julienne the vegetables.
NOODLES:
- Make the noodles as according to the instructions on the bag.
