I have always loved the taste of Ceviche but the idea of raw fish grossed me out too much. Enter Earthy Andy’s Avocado Ceviche. It’s vegan, it’s packed with veggies, and it’s delicious! With all that yummy, creamy avocado, you won’t even know the fish is gone. I love making this for a quick, easy, healthy, and light lunch.

Vegan Avocado Ceviche
Ingredients
- 1 celery stalk
- 1 cucumber
- 1 red bell pepper
- 1/2 red onion
- 1 avocado
- 1/4 cup chopped fresh Basil + cilantro leaves
- 1/4 cup juice from lemon
- sea salt + black pepper
Instructions
- Chop all ingredients into small bite sized cubes. Place everything together in large bowl, mix well, and serve. I love to enjoy on top of a salad, with chips, or just as is!
