Gluten Free Vegan Pasta Salad

This delicious gluten-free and vegan pasta salad will be sure to hit the spot. This simple, yet flavorful recipe takes only 30 minutes to make and provides all of the nutrients you need without compromising on taste. It’s also incredibly versatile!

Pasta Salad

  • 1 Box Banza Noodles
  • 1 Diced Cucumber
  • 1/2 Cup Pitted Kalamata Olives
  • 1/2 Cup Chopped Mama Lil's
  • 1 Cup Fresh Diced Tomatoes
  • 1/4 Cup Pine Nuts
  • 1 Avocado Diced
  • 1 Cup Arugula


  • 2 Tbsp Balsamic Vinegar
  • 1 Tbsp Apple Cider Vinegar
  • 2 Tsp Honey
  • 1 Tsp Dijon
  • 3/4 Cup EVOO
  • 1/2 Cup Basil Leaves
  • 1 Garlic Clove
  • Salt & Pepper


  • Cook Banza noodles according to the instructions on the box. Drain and let cool. Mix all other ingredients together with noodles. For the dressing, add all ingredients together and then slowly add EVOO while blending with an immersion blender. Add 1/2 of the dressing to the pasta salad and mix. Add more according to taste.

    This pasta salad was a HUGE hit with my family and friends! It’s easy to make ahead to share at BBQs and gatherings, and everyone loves it. I added marinated artichoke hearts, and you can’t have too many of the Mamma Lil’s peppers. It’s hearty enough to be the main course for me as a vegetarian, and I top with sliced grilled chicken and Feta for my husband. It’s just delicious and a regular on our table this late summer/early Fall.
