Curry is one of those things that never sounds that great but once I start eating it, I LOVE it!! I have had a lot of curries that are good but there is a secret ingredient in this curry that makes it AMAZING- cashews. The cashews add an added creaminess and thickness to the sauce that makes it so. dang. good.
This curry is amazing as is but there are so many ways to add to it and make it your own. I like to serve it over roasted sweet potatoes and spinach while my family prefers it over rice! I always top it will some cilantro and microgreens for some added nutritional benefits and flavor.
Cashew Curry Broccoli Stir Fry
Ingredients
- 1 cup Bell Pepper
- 2 Broccoli Heads
- 6 Cloves Garlic
- 1/3 cup Onions
- 2 15 oz. cans Coconut Milk
- 4 tbsp Curry Paste Using a curry paste vs. curry powder is key!
- 1 tsp Salt
- 1 cup Cashews
- 1/3 cup Cashew Butter

If you don’t have cashew butter on hand, you can put 1/2 cup cashews into the Vitamix and blend until it makes cashew butter. If you try this method, don’t get discouraged, it takes a few minutes. It will first turn into cashew flour and with time it will turn into delicious, creamy cashew butter. You will need to stir quite a bit to help make this happen!
