Chocolate chip cookies are hands down my favorite dessert. When I saw this recipe for cookie dough brownies that are gluten-free, vegan, and refined sugar-free, I had to try them!
Sure enough- they are delicious. The brownies are perfectly fudgy and the cookie dough is a yummy addition. Plus, anything layered always looks impressive! These are sure to be a crowd-pleaser at any event!
Gluten-Free Vegan Cookie Dough Brownies
Ingredients
For the Brownies
- 2 oz. Unsweetened Chocolate
- 3 tbsp Coconut Oil
- 1/3 cup Maple Syrup
- 2 tbsp Coconut Sugar
- 1/2 cup Almond or Cashew Butter
- 1 1/2 Flax Eggs, 1 1/2 tablespoons flax meal plus 4 tablespoons water, whisk and let set for 10 minutes.
- 1 tsp Vanilla Extract
- 1/3 cup Blanched Almond Flour
- 1/2 tsp Sea Salt
- 1/3 cup Cacao Powder
- 1/2 tsp Baking Soda
For the Cookie Dough
- 1/2 cup Softened Coconut Oil
- 1/3 cup Coconut Sugar
- 1 Flax Egg, 1 tablespoon flax meal plus 2 1/2 tablespoons water. Whisk and let sit for 10 minutes.
- 1 tsp Vanilla Extract
- 1/2 tsp Sea Salt
- 2 cups Blanched Almond Flour
- 1/2 cup Mini Chocolate Chips
