I spent years buying salad dressings at the grocery store and never truly loving salads until I made this salad dressing. This perfect simple salad started off as the salad I made for Thanksgiving and it quickly became a family favorite all year round.
In the summer, I top it with more fresh veggies such as tomatoes, cucumbers, radishes, and basil. Whereas in the winter, I use cranberries and pumpkin seeds.
The only two salad dressings I use are this one and this caesar dressing. This is also the dressing I use in my pasta salad recipe.

The Perfect Simple Salad
Ingredients
- 1 head red leaf lettuce
- 2 cups spinach
- 3/4 cup roasted pumpkin seeds
- 1/4 cup dried cranberries or pomegranate seeds
- 1/4 cup asiago
Dressing:
- 1 clove garlic
- 2 tbsp balsamic vinegar
- 1 tbsp apple cider vinegar
- 1 tsp dijon mustard
- 2 tsp honey
- 3/4 cup EVOO
- salt & pepper
Instructions
- Wash and dry the greens. The greens should be completely dry. Break apart into bite sized pieces and put into salad bowl.
- Make salad dressing. Add all ingredients into a jar. Mix with an immersion blender or whisk until well combined. Gradually add EVOO while stirring until the dressing is fully combined.
- Dress the salad. Top with other toppings. I always like to add the dressing and then the toppings so the toppings dont fall to the bottom of the bowl.

These are hands down the best cranberries.
